ok with a headline of a title, I’ve got to downplay this a bit

Yesterday had one of those classic moments of ridiculousness that just makes me laugh even now. So my friend and I met up to go to breakfast at noon, sauntering over to Beachwood to munch on some food. I watched him order in a very matter of fact way…an omelet with mushrooms and swiss cheese and bacon. And yeah…can you make that egg white? I proceeded to refer back to that point in time several times throughout breakfast in between talking about my plans leaving to Denver, and told him it was ridiculous to get all of that and then demand, “egg whites, please.” To which he replied, “the egg whites cancel out the bacon, that is why I get egg whites.” I thought of it for a bit, thinking it was like the woman who demands cheese fries and a diet coke…I mean, really? And wouldn’t you know, he was right. I guess in hindsight I was just laughing in advance for him since I realize now I was totally wrong.

Here I was laughing at even my own hypocrisy that bacon is a vegetable in my eyes (clearly I know better but it’s got a pass for now). Assuming 3 strips of bacon in said omelet, you get 12 grams of fat tops. A whole egg has close to 5 and an egg white has less than 1 and half the protein. I was laughing considering the absurdity in what everyone eats, even my own hypocrisy in getting nonfat macchiatos ladled with globs of caramel sauce (it’s the right way to drink this, trust me). This is why if I am going to have a latte, I get it with whole milk. I am tired of the non food everyone eats, the processed foods, cold cuts (lips and assholes my dad says), processed taffy pink chicken, just the diet of preservatives and half foods, chemicals. For as crazy as I thought my parents were at the time for making us eat the tasteless healthy food available when we were kids, the choices now are so extravagant it’s impossible not to find fantastic food that’s healthy. And if you want something bad for you, I firmly believe you should have the whole version of that once in a great while over the sugar free or diet versions all of the time.

I just have recently eaten this vegan mac n cheese made with cashew nuts which was delicious, and is getting me closer back to what I was trying to do years ago: eat healthy and revert any damage made due to the stress of being radiated as much as I was with the various tests by consuming a largely plant based existence, but paying attention to vitamin k consumption of course. It’s a more satisfying thing to do, especially because everything I try to keep around is largely very healthy: green lettuce and mesclun mix, tomatoes, peppers, mushrooms, greek yogurt (with coconut!), raspberries, lemons, avocados, beans, corn chips, multigrain pita chips, hummus, carrots, salsa, sour cream, and of course, shitake sesame dressing from Amy’s–ummm…yum. I also have walnuts and mango juice, as well as sweet potatoes, which are amazing baked in the oven, on the rack rubbed with salt and olive oil, cut in half and topped with butter or margarine, finished with pepper, maple syrup and cinnamon. Mashed they are too delicious.

I figure if I can keep this up and get this ionized water machine I found which does some really beautiful things for the body, I will be pure rock n roll. In Colorado this could make the difference especially due to the body’s difficulty in getting the same oxygen levels due to the altitude. I am excited to get that new kick of life, especially because life should be a little more active with regards to the natural world out there. I need to learn how to ski. Bike long distances even. Love to camp. Love to fish. But I love to swim the most… I guess I am going in that more zen healthy direction now that I am all grown up. Meditation. Love.
